Eggceptional Easter Blondies

Blondies are a favorite in our household. They are super easy to mix up and bake. Better yet, I usually always have ingredients for some kind of blondie.

Now that Easter candy is available, I decided to add some Cadbury Mini Eggs to our favorite blondie recipe. And since Cadbury Mini Eggs are a family favorite too, I figured I couldn’t go wrong.

To begin, preheat the oven to 325°.

Prepare a 9×13 with parchment paper for easiest clean up. If you don’t have parchment paper, grease the pan well with butter or cooking spray to prevent sticking.

Melt the butter and add it along with the sugars to your mixing bowl. Cream together.

Add one egg at a time and combine. Next, add vanilla mixing all ingredients are they are incorporated.

Pour in the flour, baking powder and salt.

Stir mixture until well combined.

Prepare your Cadbury Mini Eggs by putting them in a bag and crushing them with a rolling pin or other kitchen utensil.

Add chocolate chips and Mini Eggs to the dough and mix up.

Spread the dough into the prepared pan making sure the dough is as level as possible.

Bake for 35-40 minutes or until the blondies are a golden brown.

I wish I would have pressed some of the Mini Eggs on top, so you would see more of them…next time!

Egg-ceptional Easter Blondies

Ingredients

  • 1 cup sugar
  • 1 1/4 cups brown sugar
  • 1 cup butter (melted)
  • 3 eggs
  • 2 teaspoons vanilla
  • 3 cups flour
  • 2 teaspoons baking powder
  • 3/4 teaspoon salt
  • 1/2 cup semi-sweet chocolate chips
  • 1/2 cup white chocolate chips
  • 1 1/2 cups Cadbury Mini Eggs (coarsely crushed)

Preheat oven to 325°F and line a 9 x 13 pan with parchment paper (or coat with cooking spray or butter to prevent sticking).

Melt the butter. In a mixer, combine the two sugars then add the melted butter. Blend well until combined, then add eggs (one at a time) and vanilla. Continue to blend until well-combined.

Add the flour, baking powder and salt, to the butter mixture and mix again until combined.

To crush the Mini Eggs, put into a freezer ziplock bag. Use a rolling pin or other utensil to hit the eggs breaking them into pieces. Add Mini Eggs and chocolate chips into the dough, mix until incorporated.

Spread the dough evenly into prepared pan. Level with a spatula (or your hands).

Bake for 35-40 minutes or until the top begins to brown.

Let blondies cool for at least an hour before cutting.
